TIPS: LoLo Steam Jacketed Kettle
Congratulations on the purchase of your new LoLo Steam Jacketed Kettle. With proper care this equipment will provide years of quality performance.
Care of the Kettle:
Never heat the kettle empty. Always dispense at least a gallon of liquid or product in the kettle before heating it up.
Treat the interior of the kettle as you would a good stainless steel skillet. Only use non-abrasive cleaners and green scrubbing pads when cleaning. If stubborn residue exists after initial cleaning, heat soapy water to a high simmer at a level above the stain for about 5 minutes. Drain the water and remove the debris with a green pad.
Clean the exterior of the kettle daily, wiping spills or drips completely. This will enhance sanitation and keep the kettle clean.
To clean any soap residue after washing, rinse out your kettle with a 10:1 water and vinegar solution. After cleaning, use a paper towel or soft cloth to apply a thin coating of vegetable oil to the surface. This will restore the shine and help reduce sticking in future use.
Cooking with the LoLo Steam Jacketed Kettle:
Soups, stews, gravies and even roux can be prepared with very little stirring. Because the cooking surface is blanketed with steam, the heating is uniform without hot spots. This reduces the time required to constantly stir the pot.
The temperature control is set with numbers from 1 to 10. This is because the kettle heats according to pressure which means it will heat differently depending on the altitude of your facility. Experiment with the setting until you have found the correct cooking level for your specific environment.
When heating the kettle, set the control to the desired cooking level. As the kettle heats, it builds steam at a constant rate to your set cooking level. Setting the control to a higher temperature than needed will not heat the kettle faster, it will only heat it beyond the temperature needed and will take additional time to cool down to the desired temperature.
When cooking thick sauces or soups, the kettle can sometimes boil over. This is normally caused when the kettle is set above the proper cooking temperature of an item. If you think that the product in the kettle looks like it will boil over, then reduce the temperature of the kettle and repeatedly dip a room temperature metal object such as a long handled spoon or ladle into the kettle. You should continue dipping until the solution becomes less active. By doing this you are removing energy from the kettle to bring the temperature below the boiling point.
Full capacity liquid level is 2 – 3" from the top rim of the kettle. This will allow for product movement while stirring and a small space for boiling activity.
