TIPS: LoLo Steamer
Congratulations on the purchase of your new LoLo Steamer. This high production machine is a workhorse providing solid results over traditional cooking methods.
Use and Care of your LoLo Steamer:
Always show care and caution when working with a steamer. Steam carries up to six times more energy than convected air and is very intense. Direct contact with steam can cause serious injury.
When opening the steamer door during operation, open it slightly at first allowing an initial burst of steam to escape. Then you may fully open the door and manage the product within.
At the end of the day, add 1 cup of white vinegar to the hot water in the steam reservoir and allow it to steam for about 10 minutes. This will help to dislodge deposits or solids left behind during operation.
Use only a soft cloth or green non-metallic pad to clean the unit.
Always wipe the probes during cleaning.
Leave the door open when the unit is not in use to increase the life of the door gaskets and to allow the unit to completely dry between uses.
Cooking with a LoLo Steamer:
Use 2” perforated hotel pans when possible to get the greatest amount of heat circulation in the cavity.
If the product is liquid such as soup or stew and it is not in a bag, then you should use a 2” solid hotel pan.
Always use a solid “catch pan” in the rack below seafood being steamed in perforated pans. This aids in the operation and cleanup of the unit.
Cook times are greatly reduced by using IQF versus solid-block frozen products.
Steaming can reduce cook times for products such as hotdogs as much as 70% over other cooking methods.
You will never burn or scorch products in the steamer.
One LoLo steamer can be ready for production within 20 minutes of employee arrival. A standard stockpot cooking setup takes up to 1 hour to be ready for retherm production.
Some recipes can reduce required moisture needed to cook rice; this speeds up cooking time.
Cook multiple items at the same time without flavor transfer.
Melt butter or chocolate without a double boiler.
